Sweet Spicy Wings

 

 

8 wings split into two parts at elbow
Salt and Pepper
Cook for 1 hour at 325 F

Wait for the wings to cool, in fact I usually leave them in refrigerator overnight.

Heat up a frying pan at medium high heat add enough oil to coat the bottom. Add chicken wings single layer and don't overcrowd. Brown on both sides. While the chicken is browning get the sauce together.

2 T of soy sauce
1 T worchesire sauce
1 T of your favorite jam
Couple shakes of sesame oil
1 T honey
1 T breakfast syrup
1 T spicy Thai Garlic sauce. (adjust to your liking)
Mix sauce together. Remove chicken wings and place in bowl. Get rid of oil in the pan add sauce to pan cook for about a minute then pour over the wings. Mix till all wings are coated.
You can serve the wings immediately, but I think they are better cold. You will need lots of napkins

You can find the Thai Garlic Chili Sauce in the oriental section of the super market. It is very spicy so you may want to adjust the amount.

Spicy Celery Soup

2 1/2 C of celery
1 carrot
1 anaheim pepper
2 scallions
1 can chicken stock
2 TB of butter
appox a TB of flour
1/2 C of milk
pinch of salt, pepper and fennel seeds

Melt butter and add flour stir and let cook until light yellow. Meantime cut up celery, carrots, pepper and scallion into small dice. Add the vegetable mix to the roux and stir to combine. Let cook for 2 minutes, then add can of chicken stock cook until vegetable soft. Add pinch of fennel seeds. Let the soup cool a little, then blend till smooth. Once blended add back to pan add salt and pepper and milk and heat up.
Serve with crackers.
